Home Made Gourmet’s Israeli couscous, also called pearl couscous, is similar to regular couscous in that it’s a small, whole grain-like food. It’s a type of toasted pasta shaped like rice-grains or little balls developed in Israel in the 1950s when rice was scarce. Some call it, “Jerusalem couscous”, or, as it is known in Israel, “ptitim”
